Between meadows and forest, in the heart of the Lergue valley, lies Pégaïrolles-de-l’Escalette, a charming village surrounded by limestone giants. The cooperative cellar of the village is the smallest in the department but also, and above all, one of the first to have been built in the 20th century. The terroir of Pégaïrolles-de-l’Escalette is still very much alive, with a local production of wine but also cheese, notably the pélardon. Local products can be sourced from local producers or from itinerant merchants present occasionally in the village.
