CAUSSE DU LARZAC

This is a veritable fortress situated between Millau and Lodève. Its sheer height – 920 metres - dominates the surrounding landscape. The “Causse” (limestone plateau) is shaped by water erosion, and comprises a series of smaller plateaux interspersed with verdant valleys. Right at the heart of these plateaux, you’ll find a few mediaeval strongholds that once belonged to the Knights Templar. And below ground there’s many a cheese cellar to be found!
